First, they undergo 14 hours of open-air fermentation, allowing their flavors to open up. Next, they’re moved to a sealed, oxygen-free environment for 18 hours, deepening their complexity. Finally, they’re pulped and finish with a 24-hour aerobic fermentation, enhancing clarity and depth. The beans are then dried at 37°C and carefully stored in a temperature-controlled warehouse (18-19°C) to maintain their exceptional quality and flavour integrity.)
Café Granja La Esperanza began in 1945 when Juan Antonio Herrera introduced Yellow Bourbon, Red Bourbon, and Caturra to the existing Typica on Potosí Farm. Over the years, the family-run farm thrived, with two of the eleven children, Rigoberto and Luis, taking a special interest in coffee production. Expanding their operations, they acquired La Esperanza Farm to focus on organic coffee.
In 2007, Rigoberto managed La Carleida in Panama, winning Best Coffee of Panama the following year. This success led to the introduction of Geisha seeds to Colombia, marking a new era for the farm. Today, Café Granja La Esperanza is recognized globally for its specialty coffee, continuously innovating and adapting to challenges to maintain its exceptional quality and distinction.
