The Suke drying station, established in 2017 in the hills of Shakiso, Guji, was the heart of Sookoo Coffee for five years before the Sawana and Weessi stations were built. Suke sources cherries from about 35 smallholder farmers to produce Shoondhisa. Unlike large estates in Latin America, Ethiopian farmers typically manage small plots, often growing coffee alongside subsistence crops. With an average farm size of 2.5 hectares and low planting density, yields are low, averaging 0.8 kg of cherry per tree annually. All cherries delivered to Suke are organically grown.
